  Champagne cake

The "greetings cake" of garpe-pickers.

Préparation pour 6 personnes.

Ingredients

250g caster sugar, 4 eggs, ½ glass of oil, a glass of Champagne, 250g flour, one sachet of yeast, a pack of thin-sliced almonds.

Preparation

Separate the egg yolks. Mix them with sugar until white. Gradually add in the oil, then the Champagne, then the flour and yeast. Beat the egg whites until soft peaks form. Incorporate them to the mixture.

Butter a cake pan and put the dough inside. Sprinkle the almonds on top of it.
Cook at low heat (125°) for 30 minutes. When the cake reaches the top of the pan, turn to 150° and let it cook for an hour. Be sure to check if it is done.
